Ingredients

  • 1.5 oz bourbon (or any whiskey of preference)
  • 1 oz applesauce (store-bought)
  • 1/2 oz lemon juice
  • 1/2 oz simple syrup
  • 5 dashes angostura bitters
  • top with hard apple cider (Aval preferred)
  • fresh grated nutmeg (optional)

In lieu of Leo season, I wanted to dust off an obscure, Prohibition-era classic called the 'Lion's Tail'. Traditionally, the Lion's Tail is a Tiki-leaning, spiced whiskey sour consisting of Bourbon, Allspice Dram, lemon juice, and bitters. For this riff, we kept some of the same flavors, but transformed it into an easy-drinking, summer-time highball with the addition of applesauce and effervescent hard cider.

Instructions

Step 1
Combine bourbon, applesauce, lemon juice, syrup and bitters in a cocktail shaker. Add ice and shake for about 6 seconds, then strain into a Collins glass filled with cubed ice.

Step 2
Top with hard cider. Garnish with skewered apple slices, and the option of fresh grated nutmeg.
