Pickled Spring Onion Martini
Ahh, the classic martini. Boasting with sophistication, this cocktail comes with a variety of preferences from person to person. Don’t be afraid to play around with the recipe quantities to determine how you prefer your dirty martini. A dirty martini typically includes a splash of olive brine as well as an olive garnish. In this spring inspired dirty martini, pickled spring onion and its pickling brine is utilized instead. Spring onions are sweeter than scallions and are the perfect addition for this fresh and bright martini. Make sure to serve in a chilled glass to ensure a nice cold drink as the martini is not served with ice.
Cocktail Instructions
Step 1
Fill glass beaker or pint glass with ice. Pour vermouth, vodka, and pickling liquid over the ice. Stir rapidly with a bar spoon until the outside of the glass is extremely cold and begins to frost, about 30 seconds. Strain through a Hawthorne strainer into chilled martini glass.
Step 2

**Quick Pickled Spring Onions Instructions
Step 1
Combine the vinegar, water, sugar, salt, and pink peppercorns in a small saucepan and bring to a boil. Add the spring onion bulbs and simmer until the onions are slightly tender, about 2 minutes.
Step 2
Remove onions from the saucepan and place in a heat-proof jar. Pour hot pickling liquid over the onions to cover. Let cool for 20-30 minutes at room temperature then refrigerate until ready to use.
