  • 1/4 cup roasted salted pistachios, shelled and coarsely chopped

  • ⅔ cup peach or apricot jam
  • ⅓ cup lime juice (from about 2 limes)
  • 2 Tbsp fish sauce
  • 1 garlic clove, grated
  • 2 Tbsp rice vinegar
  • 2 tsp chile flakes (I used gochugaru, but use whatever you have)
  • 2 tsp kosher salt
  • 1 lb boneless, skinless chicken thighs
